Delicious vegetarian soup, you will fall in love with its taste!
Who doesn’t like a good soup? With the right mix of ingredients you are able to create a delicious meal that will deliver to your taste buds unique experiences.
And they are so easy to make!
This recipe is a chickpeas soup with chopped tomatoes and wow, the taste is amazing. Although being a hot plate it still can be considered as a springtime soup.

- 240g Canned chickpeas;
- 400g Chopped tomatoes;
- 1 Garlic clove;
- 1 Half Onion;
- 4 Parsley twig;
- 4 tablespoon Oil;
- Hot pepper.
The first step is to cut the onions very finely.
Put them in a pan with oil and let them cook for a couple of minutes.
While the onions are cooking, cut finely the parsley, the garlic and the hot peppers.
Depending on your personal taste, choose how much hot pepper put in this soup.
I personally love spicy food and in this case I did put three whole dried hot pepper.
In the end it was very spicy and I loved it!
Instead, if you are not a fan of spicy food then I suggest you put less!
When the onions reach that slightly brown color, add the spices.
Through in a pinch of salt and then stir!
Let the ingredients cook for 2-3 minutes while you stir them.
Drain the chickpeas from the water and pour them in the pan where the rest of the ingredients are.
Right after pour the chopped tomatoes.
Let the mix cook for 2/3 minutes before adding boiling water until covering it .
Let the soup cook for 30 minutes, stirring it occasionally.
When 10 minutes are left, add just a cup of water and lower a bit the flame.
After 30 minutes here you are!
Your soup is ready to be served!
The colors are amazing and the taste is indescribable!
The contrast between the acidity of the tomatoes and the chickpeas will make you fall in love with this soup!
