Stuffed Peppers!

Delicious, creative and simple. The best stuffed peppers you can find.

Sometimes you want to surprise your guests with an elaborate dish you took from a famous chef’s book. Other times, something simple and cheap can hit the right cord. This dish is perfect to surprise your guests: it’s easy and delicious at the same time!

Ingredients (4 people) :

  • 4 Peppers;
  • 2 Cans of lentils;
  • 3 carrots;
  • 1 Bottle of tomato sauce;
  • Basil;
  • Gorgonzola or other blue cheese;
  • Salt;
  • Milk;
  • Oil;
  • Sugar.

Process:

First, preheat the oven at 180C.

Clean the peppers and empty them from the seeds and put them in the oven for 20-25 minutes.

In the meantime cut the carrots finely and put them in a pan for a couple of minutes.

Add the lentils to the pan with a pinch of salt.

Cook for 10 minutes the mix.

Careful to not let the lentils stick to the pan!

Add a bit of water if the mixture is too dry.

In a separate pan cook the tomato sauce at a low heat together with oil, a pinch of basil, a pinch of salt and one very little of sugar.

In another bowl melt the gorgonzola adding a splash of milk to dilute it better.

When the lentils are cooked add the tomato sauce to the pan and stir for a couple of minutes.

Be prepared because the smell will be so good that you’ll want to eat it all in one sitting, but try to leave some for the guests!

When the peppers are ready, fill them with the lentils and add the melted Gorgonzola on top.

Now go and enjoy, it’ll satisfy the appetite of all kind of stomachs!
