This dish is absolutely perfect for a date night, surprise your crush with brilliant colors and a characteristic taste: doesn’t matter if it’s a he or a she, they will definitely fall at your feet once the meal is done!

The first thing to do is cook the chickpeas.
Preheat the oven at 180C, put the chickpeas in a tray, coat them in oil and sprinkle the rosemary on top.
Let them cook for 25/30 minutes, turning them once in a while.
While the chickpeas are in the oven, make the beetroot sauce.
It’s super easy, you will get it right!
Blend the beetroot with the yogurt, the mint and the clove of garlic until you obtain a smooth sauce.
Right after, cook the rice noodles according to the instructions on the package.
When the noodles are ready, add the sauce and stir. Put the chickpeas on top and grate the pecorino directly on the plate.
Now you have a colorful dish with a fascinating taste.
Bring it on the table and enjoy the impressed reaction of your guests!
